It&#8217;s that simple time when we come together and feed both our tummies and our souls.<\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-f69b90630ddf0ade0c819a607bdbf235 wp-block-paragraph\">Often referred to as the &#8220;Italy of Eastern Europe,&#8221; Georgia, a culinary and wine-rich wonderland in the Caucuses, is home to more than 500 varieties of indigenous grapes with the\u00a0Kakheti region producing more than 80 regional varieties.\u00a0In Georgia, you can find amber and orange wines created with Saperavi and Rkatsiteli grapes, which over recent years, have appeared on menus of just about every posh wine bar and even restaurants in gastronomic meccas like London, New York and Paris.\u00a0If Georgia has emerged as one of the most exciting and surprising wine destinations in the world, Kakhetian wine is a big reason why.<\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-e862b00a16ffa80f645d075ab3910e87 wp-block-paragraph\">Chef Tekuna Gachechiladze is the founder of Caf\u00e9 Littera, one of Tbilisi&#8217;s dining institutions located in a picturesque garden in a 19th-century residence and \u201cpoet\u2019s house\u201d, which is also included in the coveted World\u2019s 50 Best Discovery list. <\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-91fad87f8b5e88a6516ad9bfe773d8fd wp-block-paragraph\">Chef Tekuna\u2019s cuisine can be described as \u201cGeorgian Nouveau,\u201d with hyperlocal dishes changing according to seasons, including filet mignon with wild mushrooms, or sea bass with spinach and soy-ginger redaction as examples. As a female chef in a male-dominated industry, Chef Tekuna is a true ambassador for Georgia and has played a major role in continuously bringing the international spotlight to the country as a mecca for food and wine.\u00a0\u00a0<\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-e0a80e1187a944e1347db1adfd622b33 wp-block-paragraph\">Chef Tekuna has outlined some of her favourite wineries, rustic restaurants and secret locations for any traveller wishing to experience Georgian cuisine and wine straight from the source. Drain it well and press out any excess moisture; this step ensures a smooth texture later. In a blender, combine walnuts, <a href=\"https:\/\/staging.centmagazine.co.uk\/a-taste-of-blighty-10-london-spots-championing-seasonal-british-produce\/\" target=\"_blank\" rel=\"noreferrer noopener\">garlic<\/a>, fresh and dried coriander, chilli flakes, and a splash of white wine vinegar. <\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-797aad8e0628e4244c573ce483697184 wp-block-paragraph\">Blend until the mixture becomes a cohesive paste. Add the spinach and blend again until smooth. Taste and adjust the salt if needed. To serve, I like to top it with a scattering of pomegranate seeds and a few micro-greens\u2014simple but striking. <\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-05fe0bcc35437abbf9c97601f2538971 wp-block-paragraph\"><strong>Pumpkin Pkhali: Ingredients:\u00a0<\/strong><\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-2220aeabfcf3a6e4934463daa3234bb1 wp-block-paragraph\"><strong> <\/strong>\u2022 1.5 kg pumpkin \u2022 200 g walnuts \u2022 10 garlic cloves \u2022 \u00bd tsp chilli flakes (or more, if you like it fiery) \u2022 1 tsp salt \u2022 1 tsp paprika \u2022 1 tsp dried coriander \u2022 Roasted pumpkin seeds and micro-greens, for garnish.<\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-8991b8653e56c281b98f8f21c3fd45c2 wp-block-paragraph\"> Preheat the oven to 180\u00b0C. Slice the pumpkin, remove the seeds, and arrange it on a baking sheet. <a href=\"https:\/\/staging.centmagazine.co.uk\/love-gin-have-it-infused-in-food-at-market-place\/\" target=\"_blank\" rel=\"noreferrer noopener\">Roast<\/a> for about 60 minutes or until it\u2019s tender. Once cooled, scoop out the soft flesh. In a blender, combine walnuts, garlic, chilli flakes, salt, and dried coriander. Blend until it forms a fragrant, textured paste. <\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-66202250a20c224d93e0af287b1df0d8 wp-block-paragraph\">Add the roasted pumpkin to the blender and process until the mixture is velvety smooth. Adjust the seasoning if needed. Transfer to a serving dish and top with a handful of fresh micro-greens and roasted pumpkin seeds for garnish. <\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-fb3fb598bc02ab8ad48f1d39ef42151d wp-block-paragraph\"><strong>Beetroot Pkhali: Ingredients:<\/strong><\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-8fe0187f78be74b3763604bd744f1859 wp-block-paragraph\"><strong> <\/strong>\u2022 1 kg beetroot \u2022 1 kg beetroot greens \u2022 300 g walnuts \u2022 10 garlic cloves \u2022 200 g fresh coriander leaves \u2022 Chili flakes, to taste \u2022 Sea salt, to taste \u2022 1 tsp dried coriander \u2022 Pomegranate seeds and microgreens, for garnish\u00a0<\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-672a449057aa35e953730b5537987538 wp-block-paragraph\">Again, preheat the oven to 180\u00b0C. Wrap the beets in foil and roast them until tender, about 60 minutes or until tender. Let them cool, then peel and grate them. Quickly blanch the beet greens in boiling water until tender. Drain and squeeze out any excess moisture to keep the texture just right. The next to step is to combine walnuts, garlic, fresh coriander, chilli flakes, and salt in a blender. <\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-42019370955323929c4ee60b5ee84899 wp-block-paragraph\">Add the grated beets and blanched greens, then blend until the mixture is smooth. Spoon the dip into a serving bowl and finish with a sprinkle of <a href=\"https:\/\/staging.centmagazine.co.uk\/spray-your-home-with-love\/\" target=\"_blank\" rel=\"noreferrer noopener\">pomegranate<\/a> seeds and fresh micro-greens for garnish.\u00a0<\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-2410d2c27794dd6114a80ae26ec319ac wp-block-paragraph\"><strong>Grape Leaf Dolma with Minted Yogurt Foam\u00a0<\/strong><\/p>\n\n\n\n<p class=\"has-text-align-center has-secondary-color has-text-color has-link-color wp-elements-175b29a971529c414ef4f4ffa8ab7e09 wp-block-paragraph\">&#8216;<strong><em>Dolma is as much about tradition as it is about flavour. Its origins are rooted in the culinary heritage of the Mediterranean, the Caucasus and the Middle East. In Georgia, grape leaf dolma is a celebration of the seasons\u2014when grapevines flourish, and the leaves are young and tender, they are harvested and preserved to be used year-round. Grape leaves act as the perfect wrapper, locking in the juices of the savoury filling. Traditionally, dolmais often prepared in large quantities for feasts and family gatherings. <\/em><\/strong><\/p>\n\n\n\n<p class=\"has-text-align-center has-secondary-color has-text-color has-link-color wp-elements-e0130a4a17b59e6f38f06de4202b5bb6 wp-block-paragraph\"><strong><em>While the classic preparation remains unchanged, my recipe adds a fresh perspective with the addition of minted yoghurt foam. Set aside while you prep the grape leaves. A quick dip in boiled water is all it takes to soften the grape leaves, making them pliable for wrapping. Once blanched, lay them flat on a clean kitchen towel to dry. Lay a grape leaf flat, shiny side down. Place a small spoonful (about 25g) of the filling at the base of the leaf. Fold the sides over the filling, then roll tightly, like a small cigar. Repeat with the remaining leaves and filling. <\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-37043e3347b4c333e2e9c8de7cf866e2 wp-block-paragraph\">Preheat the pan, add <a href=\"https:\/\/staging.centmagazine.co.uk\/the-best-way-for-exquisite-food-pairings-italian-style\/\" target=\"_blank\" rel=\"noreferrer noopener\">butter<\/a> and vegetable oil, fry the rolled dolmas 3-4 minutes on both sides and finish it in the oven for 8 minutes. For the foam, blend all the ingredients together, strain it add it to the siphon and charge it with two cartridges.\u00a0<\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-8df0837002ccf7950712154bd0fe2cfc wp-block-paragraph\"><strong>Fried Artichokes with Walnut Sauce <\/strong> (image on left)<\/p>\n\n\n\n<p class=\"has-text-align-center has-secondary-color has-text-color has-link-color wp-elements-b272b1b9a09d88ce4d11b637c8a1e5ff wp-block-paragraph\"><strong><em>&#8216;Fried artichokes with walnut sauce is a dish that combines Mediterranean simplicity with Georgian boldness. Artichokes have long been loved in Mediterranean cuisine for their tender, slightly nutty flavour and crisp texture when fried. Meanwhile, walnuts are a cornerstone of Georgian cuisine, forming the foundation for many iconic sauces like Bazhe and Pkhali. In this recipe, the two come together in a unique blend. The crispness of fried artichokes contrasts beautifully with the creamy and spicy walnut sauce. It\u2019s a dish that embraces flavours from two culinary worlds&#8217;. <\/em><\/strong><\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-05302eaf5ac210905b1af502e87efcfb wp-block-paragraph\">Ingredients:\u00a0\u2022 400g artichoke wholes marinated in oil \u2022 200g walnuts \u2022 50ml white wine vinegar \u2022 200g corn starch \u2022 20g garlic \u2022 10g red curry paste \u2022 1g dry coriander \u2022 1g dry marigold \u2022 Sea slat and red chili to taste \u2022 1g edible yellow flowers (for garnish) <\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-74824690ad8c69e836d861b995dc1451 wp-block-paragraph\">In a blender, combine the walnuts, garlic, red curry paste, salt, white wine vinegar, dry coriander and marigold. Slowly, adjust the water gradually to achieve creamy sauce consistency. Heat oil in a skillet pan over medium-high heat. Drain the whole <a href=\"https:\/\/staging.centmagazine.co.uk\/there-is-a-vegetable-in-my-perfume\/\" target=\"_blank\" rel=\"noreferrer noopener\">artichokes<\/a> and cut in half, then dip them in corn starch.<\/p>\n\n\n\n<p class=\"has-secondary-color has-text-color has-link-color wp-elements-db2068a93c2c0f02a3a0cdef34dfe95b wp-block-paragraph\"> Fry them until they are golden brown and crispy on the outside. Remove them from the oil and let them drain on paper towels to absorb any excess oil. Arrange the fried artichokes on a serving plate. Dazzle the walnut sauce over them.
