Stars and Sturgeon: The Cosmic Legacy to Try Out
[publishpress_authors_box]
In the silent hours before dawn, Soviet cosmonauts would gather around for their final meal on Earth. The table, small but functional, like most things in the program, held an unexpected treasure: gleaming black pearls of Beluga and Sturgeon caviar, served on simple plates. While Soviet cosmonauts drifted among stars, there was one luxury they carried into the void: Caviar. This is just a small part of the legacy of premium Russian caviar. Find out more in Stars and Sturgeon: The Cosmic Legacy to Try Out
This superfood, packed with high protein and vitamins to reduce waste in the cosmonaut’s systems, was incorporated into their diet; with the practice continuing to this day. Yet, beyond these practical benefits lies a deeper significance: the psychological impact of being served a prestigious delicacy before hurtling toward the stars.
This cosmic legacy lives on in Ekaterina Bateava’s hands. In 2017, she transformed a family legacy into Volzhenka, a name that echoes the resilience of women. It was her mission; to preserve a tradition that once fueled exploration beyond our atmosphere.
Imagine a place where sturgeons are not mere fish, but ancient storytellers. In carefully crafted environments that mirror the wild Caspian waters, these magnificent creatures glide through spring-fed pools. They are not confined; they are protected. Each sturgeon, be it the rich Beluga, the elegant Osciestra, the classic Sevruga, or the robust Siberian; carries a narrative as old as the waters. These waters, which were searched high and low for, in order to create the best farming conditions for these remarkable fish and this ingenious brand.
For truly authentic and uber-luxurious caviar, the fish need to live for 20 years (cheap imports are usually taken from fish as young as five), and the brand’s commitment to life is highlighted in the fact that only about 25% of their farm is ever used at one time to get the roe.

Behind a discreet door on Rue Saint-Honoré, there’s an apartment that isn’t truly an apartment. It’s a sanctuary of taste. Deep blue walls hold the weight of untold stories. French paintwork whispers of tradition, while contemporary touches speak of innovation.
Here, Volzhenka is more than a product; it’s a living narrative.
On top of this, the house is the only company that takes caviar from farm to plate and controls all elements of the supply chain. This means the caviar that is eaten may well be only a few days from the fish rather than sitting around in brine for months.
Each jar arrives as a work of art; elegant glass vessels crowned with silver-plated lids, inspired by the exquisite 19th-century Lalique glassware. Accompanying each is a delicate mother-of-pearl spoon, an invitation to experience caviar not just as food, but as a ritual.

The crown jewel of the caviar world, Beluga offers large, buttery pearls with a delicate, creamy flavour profile. Distinguished by its golden medallion. Its subtle notes of hazelnut and clean, long finish make it the choice of cosmonauts and connoisseurs alike.
The Oscietra, adorned with a rich brown medallion, presents medium-sized pearls in hues ranging from amber to deep brown. This classic variety delivers a pronounced nutty character with hints of fresh ocean brine and a distinctive walnut finish.
The premium aged version of Oscietra, the V20, is marked by its distinguished brown medallion. The extended maturation results in intensified nuttiness, a firmer texture, and concentrated mineral notes.
The Siberian Sturgeon, featuring a warm brown medallion, its versatile caviar offers medium-sized, glistening dark pearls. Its clean, fresh flavour profile balances mineral notes with subtle creaminess and a pleasantly firm texture.
Distinguished by its striking teal medallion. The extended ageing process of the Siberian Sturgeon, the V15, concentrates flavours while maintaining the caviar’s natural freshness.
Marked by an elegant silver medallion, the Sevruga features the smallest pearls in the collection with their characteristic intense grey colouration with a light touch of saltiness.

Close your eyes and listen to the stories these jars could tell:
The wedding where twelve spoons dive into a single jar, laughter echoing louder than any toast. A quiet Tuesday evening when a single taste elevated the ordinary to the extraordinary. The gift wrapped carefully, a mother-of-pearl spoon nestled alongside; a promise of moments yet to come. Volzhenka doesn’t just serve caviar, it serves memories.
From the express deliveries that cross continents to the tables of London’s Restaurants during Caviar Week, Volzhenka has become more than a brand. This is a story of women. Of space and rivers. Of sturgeons that swim between tradition and innovation.
This is Russia’s gift to the world, preserved through women’s hands across generations. Then, the burst of tiny universes exploding with centuries of memory.
Perhaps this is why cosmonauts carried the memory of caviar into the stars, because in that perfect moment between placement and pleasure, we all briefly touch the infinite. With Volzhenka, you too become a space voyager, venturing beyond ordinary experience into a cosmos of flavour that generations have known before you.
