But the truth is far messier, more fluid, more interconnected, and yet, formless. Every experience we have is not governed by one sense alone, but by the way they weave together, spilling into one another. A single sip of mulled wine is not just about taste; it’s the cinnamon scent rising into memory, the clink of the glass, the glow of fairy lights softening its sweetness. But what connects all these threads? We don’t experience the world of sense by sense, in neatly labelled compartments, but as overlapping layers. Taste is never just taste, and sound is never just sound. They run into one another like watercolours bleeding on matt paper, impossible to truly ever separate.

Opening Up The Human Senses
To a lot of us, food feels complete because it permits us to let all of our senses blend and fuse. Whether eating together or eating alone, the act should be one steeped in enjoyment. We already know taste is heightened enormously by smell, but what about the other human elements we carry with us?
Does memory shape sweetness? Does anticipation alter sourness? Can sound make food more comforting? Eating is never just our mouth at work; it’s the whole body interpreting an experience.
Christmas Food Experience 2025
This winter, Kitchen Theory invites us to explore this idea to the full. Their Science of Christmas, a six-course immersive dining experience, refuses to separate taste from touch, or smell from sound.

Created by Chef Jozef Youssef, in collaboration with Oxford professor Charles Spence, the menu is built on the idea that our bodies don’t process experiences in parts, but as a full-body chorus.
A Little Science
Why does this matter? Science shows us that our senses are never isolated. According to Professor Spence’s research in multi-sensory perception, as much as 80% of what we perceive as ‘flavour’ is actually smell.
High-pitched music can make chocolate taste sweeter, while low, resonant sounds can make coffee taste more bitter. Even the colour of a plate can alter how filling a dish feels. Our brains are constantly cross-referencing signals, blending them into a unified experience. The Science of Christmas makes the process visible and edible.
Six Courses as an Emotive Experiment

Flavoursome
Each course is designed to prove this. The first, a cream of chestnut soup, is paired not only with flavour, but with the sound of cold air drifting through the room. This is thermoception, the body’s sense of temperature, reminding us that warmth doesn’t just live on the tongue, but also in the skin. Instinctively, diners cup their hands around the warm bowl of soup, completing the experience with touch as much as taste.
Then came spheres of root vegetables, spices and sauces; small edible puzzles. Diners were given headsets as part of the course, layering sound directly into the experience, unsettling expectation and forcing focus. Could you tell carrot from parsnip by scent, by colour, by texture, while another sense was being stimulated through your ears? Each spice and sauce, what did the colour, texture, smell, say before entering the mouth for the taste sensation? Eating became a quiet, playful experiment, reminding us that recognition is never the work of just one sense, but of them all colliding together.

Next came fish, a deliberate challenge to British Christmas tradition. For many, turkey is the only dish that belongs on a festive plate. But in other cultures, seafood marks their holiday. Here, smoked Salmon arrived with applewood smoke and dill, asking the brain to reconcile expectation with surprise. What flavour defies tradition? Do we taste it differently? Does the unexpected sharpen the senses, or unsettle them?
Later, turkey did appear, but this time under the spell of sound; accompanied by carols played out loud, filling the room with familiarity. The effect was uncanny: the food seemed more rooted, more “British”, almost as if the soundtrack had seasoned it. Did the carols elevate the taste? Did they draw out sweetness? Did they make the diners chew more consciously, more in rhythm? Science would suggest yes: auditory cues actively shape how we perceive flavour and comfort.

A course of milk ice cream and gingerbread crumble followed next; a nostalgic echo of the milk and biscuits left out for Santa on Christmas Eve. Comforting, familiar, but also loaded with expectation. Flavour here wasn’t just sugar and spice, but a state of happiness with the thrill of anticipation, the memory of being a child waiting for the magic of Christmas morning.
Finally, dessert became theatre: a molten Christmas cake with cherry at its centre and brandy sauce spilling out. The drama of the reveal was part of the taste. Surprise itself is a sensation, one that sharpens attention. But cherries at Christmas are unusual; in England, the tradition leans towards dried fruits. Did the fresh cherry enhance the spectacle or disrupt the nostalgia? Either way, it forced the table to taste more actively, to notice.

A Sensory Map of Christmas Food
To sit at this table is to realise how strict we’ve been with our senses, insisting on order when in truth, they blur. Smell alters flavour. Texture shapes sound. Memory drips into all of it. And maybe that’s the gift of Christmas: not just indulgence, but permission to let the senses be what they are; multiple, overlapping, formless.
The menu itself becomes a kind of sensory map. Root vegetables and spices become a guessing game, reminding us that recognition is never just a blend of colour, scent, and memory. Smoked salmon redefined culture, pointing out that festive meals vary across the globe. “Santa’s Treat” carried not just sweetness, but anticipation; joy folded into flavour.
Every plate was both a story and an experiment. How does cold air change the warmth of the soup in the mouth? How does a carol alter the taste of turkey? How does spectacle, cutting into a cake, watching sauce pour out, affect how indulgence lands on the tongue? Kitchen Theory offers science disguised as dining, and philosophy disguised as play.

Eating Well as a Meditation
But added to all the sensual experiences was the idea of taking time to truly engage with each texture sensation, which is all part and parcel of using all our human abilities, including breath and time, to fully be immersed in the moment.
And then there was the experience itself, not just of what was on the plate, but of how it was eaten. Diners slowed down, noticing the sounds of cutlery against porcelain, the colours that signalled flavour before the first bite, the way textures shifted in the mouth. Eating became almost a meditation of sorts, each course like a quiz for the senses: What am I tasting? What am I smelling? What does this texture remind me of? Every mouthful invited awareness, and awareness expanded into experience.
The Body and Its Formless Senses
Course after course, the senses proved to be impossible to disentangle. They didn’t run in straight lines but wove into braids, twisting until the body itself felt like one vast receptor. That is why the scent of mulled wine can quicken the pulse, why fairy lights can make chocolate taste richer, why even the crinkle of wrapping paper has a flavour of joy.

Kitchen Theory’s Science of Christmas is more than a festive meal. It is a reminder that the body doesn’t experience in fragments, but as one fluid, sensorial whole. The senses are not rigid categories, but shifting forms, spilling into one another in ways we rarely notice. And when we let go of our rigid definitions, when we allow them to be what they are, multiple, overlapping, formless, we begin to taste the world differently.

What was the moment you had the idea to look at food from a scientific perspective?
“My interest in food science began back in around 2007, 2008, when I read Hervé This’s book. He’s a French physical chemist, and one of the people who coined the term ‘molecular gastronomy’. I read his book titled ‘Molecular Gastronomy’ back then, and that sparked an interest in culinary science. And then my interest in multisensory dining, and multisensory flavor perception and experiences began around 2012 when I met Professor Charles Spence at Oxford University, when he was giving a lecture about multisensory flavor perception. And ever since then, we’ve worked with him on designing, well, publishing papers and design experiences.”

What do you feel this adds to the eating experience?
“I think having an understanding of people’s sensory and psychological relationship with food can help us design more nutritious, more sustainable, more engaging food experiences for people in schools, care homes, hospitals, but also in restaurants and dining experiences. A lot of it is about making people more mindful of how they engage with food; how they interact with it and how they take a moment to really appreciate everything from the way it looks, smells, feels, tastes, and even the way it sounds. So it’s really giving people a deep dive into the sensory relationship and experiences that they have with food, making them more mindful of it. And I think that can always work to enhance dining experience.”

Why is it important for you to bring this whole subject to the world?
“Well, I met Professor Spence back in 2012, as mentioned. And as I said, once I heard about this as a chef, you kind of think, well, we know that poor diet and nutrition is one of the leading causes of illness around the world. And so I’m not saying that multisensory science and research is the key to changing all of this, but understanding people’s sensory and psychological relationship with food can definitely help us in designing better food experiences that maybe nudge people towards making healthier, more sustainable, more nutritious food choices.”

How often do you do research? Is it constant? And if so, how does it get interpreted into the food you make?
“The research is more of a continuous thing. To date, I think we’ve published something in the realm of around 25 to 30 peer-reviewed papers in academic journals. And how this inspires and informs the dishes that we do, in some cases it does, in some cases, it’s just kind of more research that we find interesting. It doesn’t necessarily have to translate into a dish. But a lot of the time, we have ideas that can come from either Professor Spencer’s side or they can come from myself as a chef and practitioner of this. We then look at how we can structure some kind of data gathering exercise out of this, or whether we can test things on diners at the table and collect data in that way. And so in some cases, the dishes that we create are a result of the research, and in some cases, the dishes that we serve are part of the research.”
